The Fiorano Winery produces certified organic wines in accordance with European regulations on organic wine and by adopting even stricter internal standards. Every production decision is guided by a commitment to respecting nature, the grapes, and the wine’s natural aging process.

Our Winemaking Philosophy

Quality begins in the vineyard. Our viticultural practices are designed to produce healthy, high-quality grapes, minimizing intervention in the winery and highlighting the authentic expression of the terroir.

Hand-harvested

The grapes are harvested exclusively by hand to preserve their integrity and prevent unwanted fermentation. The grapes are processed within one hour of harvest to maintain their freshness and quality.

Winemaking and Terroir

The grapes are vinified in stainless steel, wood, or amphorae, and each vineyard is processed separately. This approach allows us to bring out the unique characteristics of each terroir and each grape variety.

Spontaneous Fermentations

Fermentation occurs naturally thanks to the indigenous yeasts present on the grapes. This approach gives the wines an authentic aromatic profile that is deeply rooted in the region and its winemaking tradition.

Natural aging

After fermentation, the wine ages on its fine lees to develop complexity and elegance. The use of sulfur dioxide is kept to a minimum, well below the limits set for organic wines.
