WINEMAKING: Gentle pressing and fermentation with autochtonous yeasts under controlled temperature in stainless steel tank.
REFINEMENT : For a few months over fine lees in stainless steel tank
SENSORY PROFILE: Dark pink with a purple nuance. The pleasant bouquet has intense tones of fruit and flowers , with notes of strawberry and cherry, and wild rose. The taste is elegant, fruity, savoury, and fresh to the palate, with a long persistence. Elegant, with a nice freshness linked to the acidity; good persistence, light and drinkable

Fermentation, maturation and ageing
Grapes hand-picked in crates and crushed and stemmed immediately. Light pressing of the bunches.
Alcoholic fermentation for 18/20 days at controlled temperature < 28-30 °C in stainless steel tank with indigenous yeasts with repeated light pumping-over of must, and delestage.
Spontaneous malolactic fermentation.
Matured with lees sediment in stainless steel for 7 months, then refined in oak casks for one year. Ageing in bottle for 12 months.

Intense ruby red colour, with violet overtones, a mature red fruit aroma with blackberry and plum to the fore. A sweet soft flavour, long-lasting and harmonious appealing in the mouth. Not filtered may contain sediment.

Spontaneous malolactic fermentation. Aged in 10 hl Slavonia oak barrels for 30/36 months. Further ageing in bottles for 24 months.

Sensory profile
Deep ruby red colour. Intense aromas of wild cherry, plum and black cherry, elegantly fused with mellow tones of oak. A wine of excellent structure, full-bodied yet elegant and balanced. “Ser Balduzio” is long on the palate. A wine to accompany elaborate dishes, rich and complex. Not filtered may contain sediment.

Name derived from an important woman of our family. The FIORANO farm produces this particular white wine which is obtained from indigenous Pecorino grapes, a very old vine of the Picenum province of Marche region.

FOOD-MATCHING: eclectic wine, pairs with important fish dishes, medium-seasoned cheese and white meat.

We celebrate 30 years of activity by making a restyling of our most famous label and precisely the OFFIDA PECORINO DOCG ” DONNA ORGILLA ”
The new label designed by the Piceno artist LARA PIGNOTTI , is a tribute to the history of Cossignano and its most famous woman , the medieval castellan DONNA ORGILLA. The woman’s hair is in the wind and her sinuous, lithe body speaks of grace and beauty as a white wine does. In the background the watercolor of the Picene hills gives lightness to the design, embellished by the gold of the flowers and grasses placed on Donna Orgilla’s dress and in her hair to evoke the main scents of the wine
Punteggio – Booking award for 2022 year
In January 2023 we celebrated 30 years of uninterrupted agricultural activity. An important milestone that has brought us much satisfaction and that we are celebrating throughout 2023 with various events at the winery. It is not easy these days to run a business always pursuing one’s goals and chasing one’s dreams. Still, we think we have accomplished a lot even though much always needs to be done.

“Snail” award of the SLOW FOOD guide to FIORANO ORGILLA EVO OIL
Slow Food’s Guide to Extra Virgin Olive Oil 2022 has been in distribution for a few days. The compass book that every year helps consumers disentangle themselves from the complex and articulated world of quality oil has awarded the “SNAIL” to our farm for the production of the organic oil “Orgilla”.
The SNAIL is the certificate of excellence awarded to Italian oil producers who stand out for their organoleptic, territorial and environmental values in line with Slow Food’s ‘good, clean and fair’ philosophy. Belonging to the ‘medium/light fruity’ category, Orgilla organic oil has a good ‘fruitiness’ of medium to medium/light intensity depending on the year. On the nose, scents of artichoke, cut grass and a mix of tomato and almond stand out.
